Colombia is an origin that produces some of our favourite coffees. We love the diverse range of coffees that can be found in Colombia. These are affected by differences in soil, climate, varietal and post harvest processing. This is a lovely washed coffee from a group of small hold farmers in the Inza municipality.
Farm Overview:
This coffee is produced by small hold farmers located in the Inza municipality on the western side of Cauca. All producers have a small amount of land and don't have enough trees to be able to produce their own microlot. By working together as a community they are able to combine their harvest to create a large enough volume to be sold to buyers.
Farms typically have a few hundred trees Caturra and Castillo trees grown at around 1700-2000masl.
Harvesting and Processing:
All coffee is hand harvested with careful attention to the selection of ripe cherry. The coffees are left to rest, pulped to remove the outer skin and then dry fermented before being washed.
Drying typically takes place on concrete patios for about 2 weeks.
Tasting Notes:
This is a classic washed coffee from Colombia. Flavours include green apple, honey and cacao.
