Overview

China's journey into the realm of specialty coffee is a remarkable one. Primarily known as a nation of tea drinkers, it's intriguing to see China's emergence in the specialty coffee sector. This shift began in the late 19th century when the French settlers introduced coffee to Yunnan province. However, coffee remained a background player until 1988 when the Chinese government, with corporate support, notably from Nestlé, revitalised the industry. Today, coffee is not just a luxury item but also a symbol of status among China's younger generations, particularly in urban hubs like Shanghai.

China's coffee production primarily revolves around Arabica beans, cultivated largely in the Yunnan province. Though a minority, some Robusta beans are grown in Hainan and Fujian provinces. Yunnan, a region synonymous with the famous 'Pu'er' tea, offers an ideal coffee-growing environment with its mountainous terrain and mild climate. These geographical advantages place Yunnan in the heart of the coffee belt, bordering countries like Vietnam, Myanmar, and Laos, and contribute to the cultivation of exceptional coffee.

Processing Methods

China's specialty coffee producers employ various processing methods, enhancing the unique qualities of their beans. The washed process involves removing the cherry's fruit using water and machinery, followed by fermentation to eliminate mucilage. The natural process, on the other hand, sees cherries drying in the sun on patios or raised beds, a procedure that can span several weeks. Lastly, the honey process involves stripping the cherry's outer layer and leaving the mucilage, which acquires a honey-like texture as it dries, offering distinct flavour nuances.

Flavour Profiles

These coffees are characterised by a balanced flavour profile, with pronounced fruity notes and a pleasing sweetness. Interestingly, Yunnan's washed coffees often have a very similar taste profile to Central and South American coffees.
