  • About Luz Helena Salazar Pink Bourbon | Colombia

    Luz Helena Salazar is a coffee producer located in Quindio. She is married Jairo Arcila and they have two children together, Carlos and Felipe Arcila, who are the co-founders of Cofinet, an export/import business for their coffee.

    This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then fermented for 45 hours before being moved to dry on raised beds.

    This microlot comes from the Pink Bourbon varietal trees. This is a high cup score microlot, scoring an impressive 87 points with incredible bright, juicy and complex tasting notes. Tasting notes include passion fruit, cranberry and dark chocolate.

Processing Method

Natural

The natural process is the most traditional method, where whole cherries are dried intact in the sun. As the fruit dries around the bean, it imparts a heavy body and intense fruit flavours. When well-executed, it produces a sweet and fruity coffee.

Pink Bourbon

The Pink Bourbon varietal is one of the most compelling cultivars in contemporary Colombian coffee production. Visually distinguished by the striking salmon-pink hue of its ripe cherries, this rare plant is the result of recessive genes that require meticulous isolation to prevent cross-pollination. While long-rumoured to be a natural hybrid of Red and Yellow Bourbon, recent genetic research suggests a more exotic lineage, likely tracing back to Ethiopian landrace varieties.

For the producer, Pink Bourbon is a demanding but rewarding crop. The cherries possess a significantly higher glucose content than standard varieties, providing a rich foundation for complex fermentation. This elevated sugar density results in a cup defined by exceptional sweetness, a silky body, and a structured, bright acidity.
