The Producer

Coffee Origin
Colombia 🇨🇴
Colombia has been blessed with a perfect climate for coffee growing as it has a dozen micro-climates across thousands of miles, volcanic soil, and just a perfect amount of rain. Discover more about Colombian coffee.
Processing Method
Natural
The natural process is the most traditional method, where whole cherries are dried intact in the sun. As the fruit dries around the bean, it imparts a heavy body and intense fruit flavours. When well-executed, it produces a sweet and fruity coffee.
Coffee Varietal
Pink Bourbon
The Pink Bourbon varietal is one of the most compelling cultivars in contemporary Colombian coffee production. Visually distinguished by the striking salmon-pink hue of its ripe cherries, this rare plant is the result of recessive genes that require meticulous isolation to prevent cross-pollination. While long-rumoured to be a natural hybrid of Red and Yellow Bourbon, recent genetic research suggests a more exotic lineage, likely tracing back to Ethiopian landrace varieties.
For the producer, Pink Bourbon is a demanding but rewarding crop. The cherries possess a significantly higher glucose content than standard varieties, providing a rich foundation for complex fermentation. This elevated sugar density results in a cup defined by exceptional sweetness, a silky body, and a structured, bright acidity.

It took me a while to adapt to this as I have been drinking the Brazilian single origin for a while now. As I love South American coffee and chocolate notes I had to give this a go, this one tastes bright and has quite an obvious fermented taste which gives it a fruity flavour. It really is a delight to drink, and unlike anything else I’ve tried. I hope it’s around for a while as it’s so good.
I run this through my 20 bar espresso machine and have with cream and honey, which compliments the coffee flavours so well :)
Yes, it does have the particular acid tang of passion fruit! Please attempt to get hold of future harvests of both the washed and fermented pink bourbon! Thanks.
I'm a great fan of pink bourbon, also a great fan of anaerobics, and this one still surprised me. Best coffee I have had in a long time.
